Cream of Spinach soup

1 white onion chopped
4 stalks of celery chopped
2 potatoes chopped
2 zucchini chopped
2 cups cabbage chopped
3 cups vegetable stock
1 bunch spinach
1 T Italian seasoning
1 T coriander
1 tsp cayenne
Saute onion and cabbage until tender. Add the rest of the ingredients, except spinach, and enough water to cover. Boil until potatoes are tender. Remove from heat and add spinach. Blend. Add salt and pepper to taste and serve.
