Blanched cauliflower with miso/cashew sauce

1 large head of cauliflower
¾ cup miso
¾ cup cashews
1 handful parsley
1 T oregano or Italian seasoning

Bring sauce pan with 4 cups of water to a boil. Place chopped caulflower in water and simmer for 3-6 min. Remove from heat and drain.

Place miso, salted and roasted cashews in blender. Blend till smooth add water if needed. Add parsley and spices blend and add water until it becomes smooth.
